Get a start......


Besides main vegetable and meat, something you must have in order to finish a nice dish. They are very important in Chinese cooking. I will list the essential sauce first, most important is vegetable oil (alternatively you could use peanut oil or groundnut oil they are all available in most supermarket), but do remember do not buy olive oil; personally, I do not like the flavour when it is cooked. My mum uses vegetable oil all the time and we do not have olive oil as cooking oil in China. The second important is salt, do not get low-salt, it is not really good and normal salt is much easier to control the amount we add to every dishes. Vinegar is so important; I mean to me, I like my food taste vinegary, we use rice vinegar which with a darker colour and not really existing in any superstore, well, you must have the normal vinegar for your fish and chips, so that will do for now.” Amoy Soya sauce”, I am sure everybody knows it, I even did not know it when was in China, because most of the cooking sauce is locally manufactured. Please buy “light” one, since “dark” will give your dishes awful colour.
There are three vegetables essential to all the cooking, they are ginger, garlic and spring onion. You will know why they are important when we have got a start.
