Not just omelette!
My Dutch flatmate cooked for me once the omelette, that reminded of one of the famous Chinese dish-egg and tomatoes, that is so popular everywhere in China and because of its simplicity, it is popular in both youth professionals and students.
Egg could be fried with many vegetables in Chinese cooking and it is a very healthy ingredient. I would introduce two here and I am sure some reader would adventure some others by their own way.What ingredients we need? You can tell from the pictures below.I am sure that’s quite clear.

I'd better attach the list of the ingredients here:
Egg (2), Cucumber (half), Garlic (3 cloves are enough and cut them to slices), Salt, Vegetable oil.
It is so funny to know that you can get half cucumber in the supermarket, it is hard for people to use only little vegetable if he dose Chinese cooking, you will find the vegetable consume much quicker than you made salad or sandwich.
Here is what we need to do on them:
1. Warm oil up, stir garlic 2 Mins for adding the flavour to the oil, then put the whisked eggs in, stir until it is 80% ready
2. Put sliced cucumber in, stir with eggs together, and add 1 tsp salt. Keep stirring until it is cooked
3. Add some water when necessary or 100ml chicken stock.
You know when you do the tomatoes with eggs; you could possibly put some ketchup, which is my favourite way, then do need add any more salt and will be rich in tomato juice.
I think you should put the vegetable in when the egg is 80% cooked so that it could remain tender when it is stir-fried with cucumber or tomatoes.
The above vegetable is always easy to be cooked, so the length of the cooking time is up to you.
NOTE:When you cook tomatoes with eggs
The method is similar to above, no garlic needed and top up with some spring onion would be better.
Remember stir-fry until the juice all come out from the tomatoes.
I would have thought the tomatoes with eggs is also a change for breakfast,
Toast two slices of bread and sandwich them with tomatoes and eggs,that keeps you going till lunch time.
